The holidays are through and winter has set in.

Start the new year right:
More Veggies!

Exercise
I know the gyms are packed with those resolutioners & it's too cold to think about going outdoors, so do something in the house - Anything is better than nothing. Lots of videos on YouTube to follow (band work outs, Barre, abs, yoga). Just standing and doing 100 bodyweight squats while watching tv will get the blood flowing and burn a few calories.

Protein Pancakes
3 egg whites
1 scoop vanilla whey protein isolate
Mix and pop in a skillet.

Toppings may include:
Drizzle of maple syrup
Compote of blueberries with stevia
Scoop of ff cottage cheese mixed with cinnamon and some stevia.

Rum Cake
  • 1 boxed yellow cake mix                                1 package vanilla instant pudding mix
  • 4 eggs                                                                1⁄2 cup cold water
  • 1⁄2 cup cooking oil                                            1⁄2 cup rum
Mix it all together, pour into bundt pan, bake 325 for 1 hour. Let cool before adding glaze below.
Glaze
  • 1⁄2 cup butter                   1⁄4 cup water               1 cup sugar                       1⁄2 cup  rum
Butter, sugar and water in a saucepan (bring up to a boil for a minute or so then remove from stove). Add rum.
I like to poke a few holes (use a chop stick) before drizzling the glaze over the cake. Helps get some of the yummy rummy glaze down into every slice - a nice surprise.

Apple Pie Yogurt Pops (bit of summer with this frozen treat, but apples and cinnamon to get you ready for fall)
2 cups vanilla yogurt (I use Greek non fat)
Cinnamon to taste (.5-1 tsp)
Apple pie filling (cut the apples into smaller bits). Add as much as you prefer to see/taste in the pop
Mix it all together and pour evenly into popsicle mold, add sticks and freeze.
Once frozen I run warm water over the mold to get the pops loosened for removal, then store in a ziploc bag.
